Grilled Sausage and Veggies Dinner

Everybody appreciates a quick, easy, no-mess, healthy dinner recipe, amirite? That’s what I thought. You will impress all of your friends with this meal because it is full of flavor and oh did I already mention that it’s SO easy to make? This meal is perfect for a dinner party, potluck, or just a simple weeknight meal for your family. You can grill the ingredients if you have a grill, or bake them on 1 sheet pan in your oven!

 

(serves 4-6)

 

-          2 packages (8 links) smoked andouille chicken sausage, coined (I used the Trader Joe’s brand but any option works well here! You can also use smoked turkey links as well)

-          1 lb. baby potatoes, chopped into 1 inch pieces

-          2 yellow or green zucchini squash, coined

-          ½ onion, sliced thinly

-          1 orange/red bell pepper, chopped asparagus (optional)

-          1 can of corn kernels (rinsed and drained) or roughly chop 3-4 corn on the cob into 1 inch pieces

-          ½ c olive oil

-          1 tbsp. oregano

-          1 tbsp. parsley

-          1 tsp. cayenne

-          1 tbsp. smoked paprika

-          1 tsp. garlic powder

-          S&P to taste (I use about 1 tsp. of M-Salt)

-          1-2 tbsp. of fresh chopped parsley or basil

 

SHEET PAN METHOD:

1.       Prep your sausage and potatoes, throw them together in one bowl. Prep your veggies, set aside. (the sausage and the potatoes have a longer cooking time)

2.       Whisk the olive oil with the spices until combined and pour onto the sausage/potato mixture.

3.       Spread the sausage/potato mixture onto a sheet that is lined with foil

4.       Bake for 30-35 minutes until the potatoes are fork tender. At this time, add your veggies (zucchini, onions, corn, peppers, asparagus etc). Toss to combine. Bake for another 5-7 minutes.

5.       Top with a little chopped parsley or basil and enjoy!

GRILL METHOD:

1.            Heat your grill to desired temperature

2.            Prep your sausage and potatoes, throw them together in one bowl. Prep your veggies, set aside. (Sausage and the potatoes have a longer cooking time)

3.            Whisk the olive oil with the spices until combined and pour onto the sausage/potato mixture.

4.            On a sheet of foil, add your sausage/potato mixture onto the grill and cook until the potatoes are fork tender, mixing as needed so it doesn’t burn. Add your veggies and grill for another few minutes.

5.            Top with a little chopped parsley or basil and enjoy!

 

*You can play around with the spices if you’d like- sometimes I sprinkle a little cumin to the mixture, or I add more cayenne for the heat (optional). This recipe is super versatile!

*I normally use canned corn kernels because it’s easier, so feel free to pick what works for you

*This is a perfect meal prep meal, store in an airtight container in the fridge for up to 5 days.
