Middle Easten Chicken and Potato Sheet Pan Dinner

Sheet pan dinners are literally the easiest meals you can make, since you only one use one dish! All the ingredients are tossed together on the pan, and once it cooks- cleanup is a breeze. This is perfect for a busy weeknight, but is fancy enough for a date night as well.

My parents recently visited Israel and Jordan, and raved about how amazing the food was. They brought me back a bag of local spices, and I’ve been adding it to all the things! Cooking them into eggs, potatoes, and mixing it with olive oil for a delicious dip with some crusty bread. Unfortunately the bag was not labeled so I’m calling it Mystery Spice Blend- it is similar to Za’atar though, so you can use that in this recipe. It tastes very deep, earthy and woodsy, but has some bright and herbal notes to it. Either way, it is delicious! I threw together this easy sheet pan dinner and the star of the dish is clearly the spices! I topped it with some feta, homemade tzatziki and olives and it was total dinner perfection.

(serves 2)  - 1 ½ lb chicken breast, cut into chunks  - 1 lb yellow potatoes, chopped into 1 inch pieces  - Mystery spice blend (can sub and use Za’atar) – I used about 1 tbsp for both the chicken and the potatoes  - ½ red onion, sliced thinly  - 1 lemon, zested and sliced  - 2 tbsp. olive oil  - Olives, optional  - Crumbled feta    1. Preheat oven to 400. Spray sheet pan with cooking spray  2. Add the chicken and potatoes to the pan- sprinkle with the spices, lemon zest and drizzle with the olive oil. Mix with your hands until all the pieces are evenly coated. Arrange the pieces in a single layer on the pan  3. Add the red onions and lemon slices on top of the chicken/potato mixture  4. Cook for 30-40 minutes until the chicken is cooked through  5. Top with feta, tzatziki and olives. Serve!    For the tzatziki:  - 1 cup whole milk Greek yogurt  - ½ English cucumber, chopped into small pieces  - 1 lemon, juiced  - 2 tbsp dill, chopped (can cut back to 1 tbsp- I always overdo it on the dill because I’m obsessed)  - Salt and pepper, to taste  - 1 clove garlic, minced
