Kale and Cashew Pesto Pasta with Grilled Chicken

(serves 4)

Dinner really doesn’t get much easier than this! It is a very minimal recipe with just a few ingredients and will be on the table in under 30 minutes!

-          1 package penne, rotini pasta (or pasta of your choice), cooked to package directions

-          1 tub of the Vegan Kale, Cashew & Basil pasta (from TJs)

-          ½ freshly squeezed lemon

-          ¼ basil, chopped

-          Olive oil

-          1 ½ lb grilled chicken breast, chopped (I seasoned mine with paprika, garlic, S&P)

1.       Toss the cooked pasta with the pesto, a splash of olive oil and the lemon juice

2.       Add in the grilled chicken, top with the freshly chopped basil and serve with lemon wedge!
