Tomatillo-Garlic Pulled Pork with Chimichurri Cauliflower Rice

MMMM this is one of my FAVORITE weeknight crockpot meals, it is SO easy to throw together, and it makes for fantastic leftovers! I make a batch of chimichurri on a weekly basis and throw it on eggs, potatoes, chicken, fish, pork- literally whatever your heart desires. It adds a fun zip of herby goodness to whatever you’re serving it with! In this recipe, I add it to cauliflower rice to add some flavor and spice, and you can also drizzle it on the pork when you’re ready to serve! if you aren’t familiar, cauliflower rice is a delicious low-carb alternate to regular rice. Yes, rice will always prevail, but sometimes it’s nice to sub it with a vegetable that has a similar texture! Enjoy!

Italian Chicken Meatballs stuffed with Mozzarella

 I have many vices, but one of the biggest ones is wanting to eat pasta every single night. I mean, it can’t be that bad for you right? WELL- if you make your meatballs with lean, protein-packed chicken, then maybe you can?? All jokes aside, this is a super easy weeknight dinner recipe that you can whip up in no time, plus, it is perfect to reheat for leftovers. You can even omit the spaghetti if you’d like and sub in a salad, but that sounds horrible so just keep the pasta J -wow I am full of jokes today. You can totally sub half of the pasta for spiralized zucchini noodles to keep it low carb, no judgements here.

Sunday Night Bolognese

Alright y’all. This is titled Sunday Bolognese for a reason. It has many ingredients, it is labor intensive, and it takes time. BUT SO WORTH IT AT THE END. So plan accordingly!! You can make this over the weekend and it would be lovely for leftovers, just don’t make this on a Monday night after a long day of work. The aromas of the sauce cooking will make all of your neighbors knock on your door to sneak a taste, I promise J Hope you guys love this as much as I do!
