I am hanging onto summer with every last thread of my being, and that being said- am trying to use alll that remains of my basil stash. I’ve been trying to get creative with making basil recipes, and this is one of my favorites! I’ve been making homemade basil pesto all summer and not once have I written it out (v sorry), but I did write out this super easy weeknight dinner recipe that uses my beloved basil pesto. Make your own homemade, or grab a jarred version, and you’re good to go!
Holding onto summer for as long as I can!! You might think I’m crazy, but I LOVE summer and hot weather and am slightly depressed that fall and winter are coming. In honor of a long summer, I made these delicious smoky Mahi-Mahi tacos and enjoyed them with a crisp glass of white wine! This VanDuzen Pinot Gris was a PERFECT pairing with the tacos- the salsa complimented the tropical flavors in the wine, and the brightness of the wine subdued the spice in the tacos. These are easy to make, super healthy, and delicious!
MMMM this is one of my FAVORITE weeknight crockpot meals, it is SO easy to throw together, and it makes for fantastic leftovers! I make a batch of chimichurri on a weekly basis and throw it on eggs, potatoes, chicken, fish, pork- literally whatever your heart desires. It adds a fun zip of herby goodness to whatever you’re serving it with! In this recipe, I add it to cauliflower rice to add some flavor and spice, and you can also drizzle it on the pork when you’re ready to serve! if you aren’t familiar, cauliflower rice is a delicious low-carb alternate to regular rice. Yes, rice will always prevail, but sometimes it’s nice to sub it with a vegetable that has a similar texture! Enjoy!
I have been a Napa Cellars Zinfandel fan for a long time, so when they agreed to partner with me for a food/wine pairing, I was ecstatic! I created this dish purely to pair with the Napa Cellars Pinot Noir because I think the flavors in the wine complement the spicy, sweet flavors of this dish!
This easy dinner recipe was inspired by a bottle of Rose that I received from a local Virginia winery! (Early Mountain Vineyards in Charlottesville) I LOVE pairing wine with delicious foods and this was no exception. These Mediterranean chicken bowls will be a staple in our house this summer! They are so easy, HEALTHY, and versatile! You can change up the grains, add in some leafy greens if you wish, and use any and all the fun toppings your heart desires! This recipe was inspired by one of my favorite fast-casual restaurants, Cava Grill- they have the best lunch bowls! Marinating the chicken overnight makes it super flavorful and extremely tender- mmmmm!
