Summertime Italian Pasta Salad

I recently began a partnership with a local, female owned, culinary business called Dress It Up Dressing! They are located in Bethesda, MD and distribute to several health food grocers across the country! They make dressings/marinades from all natural ingredients, many of them cater to people of all dietary needs. They also commit to producing their dressings responsibly and sustainably, and sourcing locally if possible. Dress It Up works with local organizations such as DC Central Kitchen and DC Public Schools to provide quality products to the community.

Now, onto this delicious summer dinner recipe! Cheers!

 

(serves 6)

 

-          1 package Rotini (16 oz)- cooked to package directions (I like al dente), cooled

-          2 c. spicy salami, chopped into small cubes

-          2 c. mozzarella cheese or baby swiss, chopped into small cubes

-          1-2 c. cherry tomatoes

-          ¼ c. parsley, chopped

-          ¼ c. pepperoncini, roughly chopped

-          Fresh basil, chopped

-          Roasted artichokes, chopped (optional)

-          Salt & pepper, to taste

-          Dress It Up Dressing, Red Wine Vinaigrette- to taste

 

1.       Assemble your salad by adding all ingredients to a large bowl, combine. Season to taste.

*This salad lasts in the fridge for up to 5 days, undressed. Add dressing once ready to eat! Enjoy!
